I’m working in Sandefjord at the moment, and it has been fun to visit this traditional Whaling City. The hotel we live in have a lot of memorabilia from that time, a time long gone now. And that’s maybe just as well. The closeness to the sea makes e want a wine that goes with it. For this week I have gone with a very nice with from the first winery we ever visited. Chablis has been a favourite here in Norway since the mid nineties when the great wine writers from DN introduced this wine to us. They correctly identified the saltiness and sea like qualities of this wine would fit perfectly for the Norwegian palate and also our best foods. La Chablisienne lies in the hart of the beautiful Chablis village. This cooperative has been in operation since 1923 and is one of the most well function co-operatives in Burgundy today. Herve Tucki captains the ship with a steady and safe hand and always produces great wines. A sunny day by the sea with lemon lime and green apples on the nose. Great minerality and acidity gives great structure and freshness. In the mouth it is long and fresh, with lemon, green apples and hits of butter. A super wine with sea food, but also a pleasure to drink alone.
