Finn-Erik Cooks - Roasted Chicken Stock

Roasted Chicken Stock

A good sized bag of chicken wings
5-6 onions
A handfull of ginger
Assortment of dried chilis
3-4 Fresh mushrooms 
3 star anise
1 handfull of dried porcini mushrooms
2-3 dl white wine
1/2 dl of Aquavit (Cognac or Armagnac works as well) 
2 dl og soy sauce
About 2 L water

​For this recipe I use a pressure cooker. You can use a cast iron pot instead, but estimate 5-6 hours of slow cooking.

Roast the wings in the oven using high heat and a couple og tea spoons of oil. 
Cut vegetables in rough chunks. No need to peel. Add wings, vegetables, liquids and dried chilis; pressure cook for 90 min.

Drink some nice red wine while waiting :)

Strain the lot, have a taste, cool down and freeze. 

Use in all types of cooking to add flavour and enjoy all the healthy stuff that comes from a propper stock.
