HANGOVER TOAST

Sourdough bread
Sweet and spicy mustard
1 green apple
1 large shallot
English traditional cheddar cheese
Spicy cured meat sausage (ASK Kruttsterk)
1/2 fennel 
1/2 dl pickle base
Honey
Chili powder
​Yuzu (or lime/lemon)
Smoked Sea Salt & Pepper

Chop shallots and caramelise in pan using low/medium heat. Slice apple in nice halves. Cook tender in a table spoon of honey, splash of Yuzu and pepper.
Wash and rinse fennel and slice into thins using a mandolin. Pour over the pickle base and set for 10-15 minutes.
Slice the sausage in thin cuts and roast in oven using high heat. You're looking for crispness. Shred the cheese.

Assemble the toast starting with sweet mustard, smoked salt, pepper and chili on both slices of bread. Add cheese on both sides as well. 
Add tender apple slices, caramelised shallots and crisp cured sausages. 
Melt propper butter in pan and slow cook the royal toast using low heat. Put a lid on top.

Serve with pickled fennel and some herbs.
