King Winter has a fm hold on our parts of the world and the only sight we have of spring and warmer weather is the ones we dream of. And to help our dreams we have found a very nice Burgundy red, fine and fruity, to help us dream of the sunny skies we hopefully have in our future. The Domain Pascerette des Vignes was created in 2013 and is the project of a lifetime of Celine Robertgeot. In a few years, this Domain have impressed oenophiles in search of burgundy wines through nice finesse, an elegance and a personality. The estate is located on the slopes of South Burgundy, Maconnais, in Sologny. The vines are intertwined with pastures and forests and the vineyard counts 6.25ha planted with Chardonnay, Pinot noir and Gamay at 300m of altitude, with East, South-East exposure. In addition, Celine, also raises ships on 20 ha of pasture. Sheeps are also used in the vineyards. The name of this estate “Pascerette” highlights the dual activities ; it means shepherdess and also designate the cajole, shelter for the vineyard workers. Minimal intervention is the philosophy in the cellar, and with farming practices, in order to make true and authentic wines grown in an preserved environment. This weeks wine is the Bourgogne Rouge, which is 100% Pinot Noir. Slow and gentle pneumatic press. Temperature-controlled alchoholic and malolactic fermentations in tanks. Matured on fine lees for 16 months in used oak barrels. Tasting notes: La Pascerette des Vignes Pinot Noir 175,- kr This Pinot noir displays aromas of small red and black fruits, and sweet spice. Bright fruits on the palate, with supple tannins and elegant structure. This is perfect with any kind of chicken dish. Or just to enjoy by itself.
